Our long-standing customer is a well-known European manufacturer of systems for cooking, steaming, baking and roasting particularly meat and sausage products, which are integrated into the end customer's individual production flow. Their end customers include both large industrial manufacturers and artisan butchers who produce high-quality products in the smallest of spaces. Our customer assembles each system on a modular basis according to customer requirements. 

Challenge

Our customer contacted the punker application experts with the request to provide a fan wheel solution for the development of a new thermoprocessing system for manufacturing meat and sausage products. The system was to be flexibly adaptable to the (end) customer's individual production process. The modular concept was intended to accommodate both the space-saving system design typically found in artisan butcher's stores as well as large systems used by industrial meat processors.

The variety of components was to be kept to a minimum. Depending on the products to be produced and the loading capacities, the ventilation requirements of these modular systems vary greatly, whereby a stable air flow at varying pressure levels must be guaranteed over the entire life cycle of the system.

In the past, our customer used various fan solutions to meet the widely varying ventilation requirements of the systems. For smaller systems, unhoused fans were used wherever possible. However, if a higher pressure level was required, housing fans were used.

How we were able to help

The punker application experts presented the punker Industrial Food Processing fan impellers, which were developed specifically for cooking and smoking ovens in industrial food processing, to the long-standing customer.

In intensive consultation and close cooperation with the customer through punker Service Solutions, our application experts selected the Industrial Food Processing fan impellers specifically for the customer's modular system concept.

At the same time, they compared them with the previously used fan impeller, which was used both unhoused as well as in a scroll housing to cover the required operating range, according to the application.

The wide range of characteristic curves of the punker Industrial Food Processing fan impellers made it possible to optimally match them to the individual operating conditions in the customer's thermoprocessing systems. This ensures the best possible utilization of the system components and maximizes the efficiency of the entire system.

The high-quality stainless steel impellers are ideally suited for use in greasy air, which meets the demanding conditions in food processing.

With a diameter range from 250 mm to 1000 mm and up to 3 different widths, punker Industrial Food Processing is the ideal solution for modular system concepts from small to large series. The compact design of the fan wheels supports customers' modular system concepts and enables space-saving installation, which in turn contributes to a further reduction in the ecological footprint.

Results

The direct comparison shows that a higher maximum pressure level can be generated with the Industrial Food Processing fan impellers than with the usual use of a backward curved fan impeller in a modular use, either unhoused or in a scroll housing.

The scroll housing can be omitted while maintaining the same air performance, which leads to a reduction in additional production parts and also enables a saving of 20% in the axial installation space. At the same time, the shaft power can be reduced and energy efficiency increased by up to 20%.

Reduction in component diversity and elimination of scroll housing


By using Industrial Food Processing impellers in thermal processing systems for food production, manufacturers can rationalize their component inventory and reduce complexity.
